  • Overview

    The outstanding Food & Beverage team at Sunday River is in search of Lead Cooks! A Lead Cook should be one of the most experienced and efficient workers in the kitchen. He/she should have a mastery of all stations, possess strong leadership skills, and have a positive influence on all team members. Dependability, a guest service focus, project management skills, technical and interpersonal skills, and a strong commitment to communication and teamwork are essential in this role. The varying schedule for this position will include nights, weekends, and holidays as needed.

     

    Responsibilities

    • Prepare stocks, soups, and sauces
    • Make salad, vinaigrettes, and dressings
    • Prepare various hors d'oeuvres and appetizers
    • Prep, trim, and portion all required protein items
    • Break down whole fish, shellfish, and crustaceans
    • Grill meat to exact specifications
    • Roast, braise, poach, and sautee food to exact specifications
    • Ensure that facility and food handling practices meet or exceed all federal, state, and Sunday River food safety standards
    • Ensure that food quality meets Sunday River's standards
    • Assist chef in assembling daily prep lists
    • Communicate effectively with all departments' personnel
    • Read and update banquet event orders
    • Execute banquet event orders in a timely manner
    • Assist in supervising other kitchen personnel when needed
    • Assist with quality control
    • Maintain sanitation, health, and safety standards
    • Maintain a professional appearance and attitude
    • Help manage portion control and food costing
    • Take care of guests' special dietary needs
    • Report observed maintenance needs to supervisor
    • Assist in orientation and training of new employees
    • Help to keep work stations clean, sanitized, and organized
    • Observe and help others to conform to all company policies and procedures
    • Exhibit keen customer service skills
    • Follow grooming standards including clean uniform and nametag
    • Other duties assigned or as required, ensuring our excellent service and commitment to 100% guest satisfaction

    Qualifications

    A successful candidate will posses all of the following:

    • High School degree or equivalent
    • Hospitality or culinary degree
    • Five years' experience as a cook
    • Valid driver's license
